How to Make Lime Pie
Step 1
Preheat the oven to 190c
Step 2
Crush or blend the biscuits to make crumbs. In a bowl mix the biscuit crumbs, butter and sugar with your hands. Press the mixture firmly into a pie dish or spring form cake tin and bake about 10 minutes until brown. Remove from the oven and allow to cool.

Lower the oven to 160c
Step 4
In a separate bowl combine the condensed milk, lime juice and eggs. Blend well and fill the cooled pie crust. Bake for about 15 minutes and chill in the refrigerator for at least 2 hours.
Step 5
Once chilled, combine the sour cream and icing sugar and spread over the top of the pie. Sprinkle with the lime zest and chill again to set the cream topping. Serve chilled with whipped cream or ice cream.
To serve / Optional
Best with a glass of cold milk
